Ingredients (Serves 2–3)

  • 2 cups cubed sweet potato or kabocha squash
  • 1 cup chopped kale or spinach
  • 1 tbsp ghee or coconut oil
  • 1–2 tsp grated ginger
  • 2 cloves garlic, minced
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds or powder
  • 1 tsp coriander powder
  • 4 cups vegetable broth (or water)
  • Pink salt (to taste)
  • Fresh lemon juice (optional, to finish)

Toppings (choose one or all):

  • Toasted pumpkin seeds (zinc-rich for immune balance)
  • Fresh cilantro
  • A drizzle of tahini or yogurt

Instructions

  1. Warm & Open: Heat ghee or coconut oil in a pot over medium heat. Add ginger, garlic, and cumin. Sauté until fragrant (about 1 min).
  2. Add Your Power: Stir in turmeric and coriander, then add lentils and sweet potatoes. Coat everything in the spices.
  3. Simmer Into Softness: Add broth, bring to a boil, then reduce heat and simmer for 15–20 min until lentils and sweet potatoes are soft.
  4. Add Your Greens: Stir in kale or spinach for the final 3–5 minutes.
  5. Season & Rise: Add pink salt, lemon juice, and any desired toppings.
